Sponge Baskets

So, a while back my SO went out and bought a pan which made shortcake baskets … then due to one thing or another I hadn’t used this pan at all and a few weeks ago, I was cleaning out the cupboards in preparation for the in-laws when I found the pan and felt that I had to use it NOW.

So, as I had long since thrown out the packaging which gave you a recommended recipe for the shortcake to put in I decided I would just use a simple sponge recipe – I used a recipe I found in James McIntosh’s cookbook – Mix.  It was just a plain sponge cake which I decided to make lemon flavoured by adding some lemon zest and juice.

Then on top of this I added a creme patissiere again just a simple one I found in one of my hundreds of cookbooks.

To finish these little nests off I used the fruit in the fridge.

Even if I do say so myself the finished product did look quite delicious!

These creations meant that I can now safely say I have used every pan I have in the cupboards and can therefore go out and buy myself some more … I wonder what to get next!  I think I need to invest in some better cupcake trays as I have recently bought Martha Stewart’s Cupcake book.

A bonus reason why these creations were well worth it is that I have now use the James McIntosh book – I have been trying to find a reason to use it for a while and now I have I just can’t wait to use it again.  This book is brilliant and I highly recommend it as it covers all the basics you could need in a kitchen and even gives you ideas on how to vary the flavourings or ideas!
